Pineapple Salsa

Don’t get me wrong, I love the traditional tomato-based salsa, but I absolutely love fruit salsas. And I’ve made a few…like this watermelon, mango and peach salsa (Please excuse my photos. They are older and I haven’t gone back into to retake them now that I’m more proficient with food photography) this cherry and mango salsa, or this nectarine and purple basil salsa or even this spicy peach salsa. My mouth is drooling!

This Pineapple Salsa comes together in only a few minutes and creates a fresh and flavorful addition to any meal or afternoon snack that both kids and adults will love. Fresh pineapple is combined with red onion, freshly squeezed lime juice, cilantro, garlic, jalapeño, salt and pepper. Mix all of the ingredients together in a bowl for a refreshing treat.

Salsa is versatile and a great last minute addition to your favorite dish whether it’s salmon, chicken or your favorite taco combo. I love serving this salsa over these shrimp cakes. I’ll be back in a few days to share this recipe with you.

It would also be perfect for your Cinco de Mayo celebrations.

Pineapple Salsa
Yields approximately 2 1/2 cups

Ingredients:
2 cups diced fresh pineapple
1/2 cup cilantro, chopped
1/4 cup red onion, finely chopped
1 Tablespoon finely chopped jalapeno pepper, stemmed and seeded
2-3 clove garlic, minced (you can reduce this to 1 clove if you are not that fond of garlic)
Juice of 1 large lime
salt and pepper, to taste

Directions:
In a medium bowl, combine pineapple, cilantro, red onion, jalapeno, garlic, and lime juice. Stir until well combined. Season with salt and pepper, to taste. Serve at room temperature or chilled.
