You may think by all of my pancakes posts that is all we eat here in the Roisum household. Nope, pancakes are reserved for Sundays and occasionally another day (say Wednesdays) if the batter made a lot and my husband didn’t eat them all on Sunday.
One or two mornings, we have some sort of eggs.
We eat yogurt for breakfast at least once a week. Normally, it is yogurt topped with fresh (or dried fruit) and granola and/or chopped nuts. Lately, I’ve been making my own homemade yogurt, without a yogurt maker. It is really easy and the yogurt tastes delicious. You can read more about how to make your own yogurt here.
We also eat oatmeal at least once a week. Again, topped with some sort of fruit and nuts.
This is a creative and fun way to mix the two. I combined gluten free rolled oats with dates and spices. Then I shaped them into mini tart pans (you could also use muffin tins) and baked them off.
The sweet breakfast tart shells can be made in advance and stored in airtight containers (I’ve gotten rid of all of my plastic containers due to food leaching into the containers and have opted for these glass containers).
This is also a great make-ahead breakfast because the tart shells are already made and then fill with yogurt, fresh fruit, and nuts right before you head out the door!
Strawberry Orange Yogurt Breakfast Tarts
Yields 6 servings
Ingredients:
6 Sweet Breakfast Tart Shells (get recipe here)
1 1/2 – 2 cups plain yogurt (homemade or store-bought)
2-3 teaspoons orange simple syrup (optional)
1 teaspoon vanilla (this is the brand I love)
6-8 Strawberries, sliced
1-2 oranges, peeled and sectioned
strawberry coulis, optional
3-6 candied orange peels, diced (optional)
Directions:
Mix orange simple syrup and vanilla with plain yogurt until combined. Fill each shell with 1/4 – 1/3 cup yogurt. Top each tart off with strawberries, orange sections and candied orange. Drizzle serving plate and/or yogurt with strawberry coulis.
