Peach and Fig Salsa

The other day I shared with you one of my most recent fruit salsa recipes – pineapple salsa. Since Cinco de Mayo is in a couple of days, I thought I would share another of my favorite fruit salsa combinations – peach and fig.

I’ve loved peaches all of my life and look forward to May when they come into season. I love when you bite into them and they are so juicy that it runs down your mouth.

Figs, on the other hand, are a relatively new love. But love them I do. Do you remember when I made the Fig and Berries with Raspberry Cinnamon Sauce? Or the Pear and Fig Clafoutis? Or the Bacon, Fig and Caramelized Onion Jam?

And the combination of peach and figs together is out of this world delectable. Remember the peach and fig grilled cheese? Seriously, you’ve got to give it a try!

But now I want to talk to you about how I combined these two juicy fruits into a salsa.

The peach and fig salsa is a recipe that I made up one afternoon using all the peach and fig bounty I had on hand. But, you can use any other fruit in season like mango, watermelon, pineapple or nectarines.

This salsa is perfect for a snack with homemade tortilla chips (these are baked so they are much more healthy than it’s fried counterpart). I’ve also served it over baked chicken breasts.

Peach and Fig Salsa
Yields approximately 1 1/2 cups

1 large peach, peeled and cut into small cubes
3-5 figs, chopped
¼ red onion, chopped
1 Tablespoon cilantro, chopped
1 jalapeño chili, seeded and diced
2 limes, juiced
salt and pepper, to taste

Directions:
Combine all the ingredients into a medium bowl and stir.

Serve with favorite chips.
